Since having kids I've developed a real passion for cooking. I love finding new recipes to try, for both Tom and I as well as the girls. Finding new family favourite meals is something that really excites me, especially when it is packed with goodness for the girls.

I had a tonne of questions over on my YouTube channel about my hidden veggie pasta sauce recipe, so thought it would make a great blog post!

It is an absolute favourite with the girls, filled with a tonne of hidden veggies, and the fact that the 'moster spaghetti' is also a vegetable means it's packed with even more goodies!

This recipe can be easily adapted depending what you have in the fridge, which is one of the things I love, but as a rough guide you will need:

2 tins chopped tomatoes
2 sticks celery
2 apples
2 carrots
1 pepper
1 courgette
chopped garlic
Mascarpone cheese

Take your celery, apples, carrots and pepper, and chop them finely. I've been using my Nutri Veggie Bullet for this, which means I can shred the vegetables very fine and much quicker than by hand.

Pop the chopped vegetables in a fying pan with the garlic, and cook for approx  2-3 minutes.

Add in your tinned tomatoes and cook for a further 10 minutes. Once cooled, blend the sauce until smooth.

Take your courgette and spiralize to make courgetti. You can use a spirilizer, or the Veggie Bullet like I have, and then fry for 2-3 minutes in a frying pan until soft.

When you are ready to serve, mix in a large teaspoon of mascarpone cheese into the sauce, and serve!

The girls just love this recipe, and always leave a clear plate.

Sometimes Tom and I will add a bit of bacon to ours to give it a bit of texture, but as a whole we just love this as a family, and the recipe is more than enough to last a few days, or batch freeze for an easy dinner through the week!
